About Gypsy Rose

Gypsy Rose Tea Room started out as a bakery, called Tracy's Cakes. Designer and French Pastry Chef Tracy Perkins, jumped at the opportunity to expand the bakery and adventure of offering a high-end quarliy loose leaf tea and fresh brewed coffee . Just as with her bakery, she was determined to use only the finest ingredients! We use equiste loose-leaf teas to brew the highest quality hot and cold teas in the state. We shop at the farmers market, supporting local growers, and hand selecting the freshest produce, for our to-go and catering service. We have a fequently changing menu and offer an array of specials for each season.  Gypsy Rose Tea Room, host monthly Tea Tastings, Tea 101 classes, and Traditional High Tea Service. 

About Tracy
Owner, Tracy Perkins, has years of experience in the food industry. Tracy Perkins is a French Pastry Chef, Sugar Artist  and is also a Certified Wilton Method Instructor. 
Bringing 10 years of excellence and experience in Gumpaste Flowers, Pulled and Blown Sugar, Chocolate, and specialy baking, including French cookery. 
Tracy began her career as a Wilton Method Instructor in Lewisville, Texas in 1999.  She then attended a French Culinary school L'Ecole Culinaire, in Missouri, where she majored in Baking and Pastry. Tracy moved back to her home town, Lewisville, Texas to open a speciality cake bakery and boutique, Tracy's Cakes. 
Tracy is ServSafe Certified, and holds many certificates in cake decorating industy. Not to mention has won four First place awards for her talents. Tracy is an active member in International Cake Exploration Society, Lewisville Chamber of Commerce and continues to remain active in the sugar art industry by developing and participating in new technique courses. 
During her time in Missiouri, Tracy was an active member in the Saint Louis Metropolitan Sugar Art Guild, and Auction chairman of Missiouri I.C.E.S. Spring weekend of sharing, in April 2007.  
Tracy has taken courses from well known sugar artist in the industry, Nick Lodge, B. Keith Ryder, Norman Davis and many more talented leaders.
